Last October, Delonghi France invited the illustrious pastry chef Philippe Conticini @philippe_conticini for a LIVE INSTAGRAM “#pasbondutout”!
The chef created a “big hug” of indulgence with an ultra-soft “Deca-Cake” and Victor Delpierre @victor_delpierre created a #coffeepairing with decaffeinated coffee accompanied by a touch of mixology.
To accompany this Deca-Cake, as melt-in-your-mouth as possible, I wanted to keep the key ingredients of the chef’s recipe: decaffeinated coffee and carrots.
Then I imagined a lively and fresh blend to balance the gourmet pairing and tickle the taste buds. The use of turmeric came to me because I love this blend of flavors between the sweetness of carrot and the scent of turmeric and to allow gourmets to eat this healthy (and enjoyable) ingredient!
For the turmeric-mango Chantilly:
Make the carrot juice using the juice extractor.
Extract the espresso with your espresso grinder.
Mix the ingredients and leave to rest in the refrigerator.
When serving, make the turmeric-mango whipped cream.
Fill the glasses with the carrot-clementine-passion-decaf coffee mixture and decorate them with the flavored whipped cream.
