ZOOM ON ESPRESSO*

I suggest you select a specialty coffee with a profile – gourmet and fruity – ask your roaster for advice.

For this recipe I used “Le Coffee Ride” coffee, a signature blend composed of 3 washed process origins:

– 45% of Brazil Cerrado of Catuaï variety from the “Fazenda Berrador” farm;

– 40% of Guatemala Antigua Pastoral Bourbon variety from the Acetenango cooperative;

– And 15% of Kenya AA Karo of SL28 variety from the Tekangu CCOP company.

I find it sweet, delicious and fruity with notes of chocolate, blackberry and strawberry.

The espresso is prepared with the DELONGHI espresso grinder. Here are the settings I recommend:

  • Amount of coffee: 4/5
  • Grind: 2
  • Espresso volume: 25 ml

Ingrédients

  • 1 strong espresso* (i.e. 25 ml)
  • 2 cl of Grand Marnier cordon rouge
  • 1 spray of rose water
  • 12 cl of rosé champagne
  • 3 raspberries

Step 1

Start extracting the espresso in a small pitcher.

Step 2

Place the raspberries in a beautiful flute.

Step 3

Pour in the Grand Marnier and rosé champagne.

Step 4

Add the espresso.

Step 5

Perfume the glass with the rose water spray.

VARIANTS

Thanks to the diversity of specialty coffee tastes, you can personalize this recipe by matching the aromatic profile of your coffee with the liqueurs of your choice:

For example, with a coffee with a floral profile, try this recipe by replacing the Grand Marnier with elderflower liqueur!
