Florentines

Florentines are typically made with almonds and chocolate but can be flavoured with almost anything you have in the pantry. These decadent biscuits are the perfect treat to enjoy alongside your morning milk-based coffee.

Ingredients

  • 1/2 cup sultanas
  • 2 cups cornflakes
  • 100g slivered almonds
  • 100g chopped glace cherries
  • 2 tbsp mixed peel
  • 2/3 cup sweetened condensed milk
  • 250g dark chocolate

Step 1

Preheat the oven to 170°C and line 2 large baking trays with non-stick baking paper.

Step 2

Combine all ingredients except for the dark chocolate in a bowl. Place spoonfuls of the mixture on the baking trays, leaving enough room between each biscuit for the mixture to spread. Bake for 10 minutes until light golden brown, then set aside on a wire rack to cool.

Step 3

Melt the dark chocolate in a bowl over a saucepan of simmering water. Set aside to cool for a couple of minutes then spread the chocolate over the underside of the florentines. Use a fork to make lines in the chocolate, then place the biscuits on a wire rack with the chocolate side facing up until it sets.
